Dinner is the one occasion where the food should pick the bottle. You do not need a wine list for that — you need three or four reliable styles and a rule of thumb about which one goes with what. That is all this page is.

Half a bottle per adult is the working number for a meal, so a table of four wants two bottles and a table of six wants three. If the evening runs past dessert, add one more than the maths suggests.
Red with beef, lamb and anything roasted or grilled. White with chicken, fish, cream sauces and most things out of a pan. Rosé and sparkling both sit oddly well with food that refuses to be categorised, which is most takeaway.
Order before you start cooking, not when the food is on the table. Twenty minutes of chill time makes more difference to a white than the label on it does.
Buy one of each rather than a compromise bottle. Two open bottles at a table of six is normal and neither goes to waste.
